When the crop matures, the leaves turn yellow and look dried up, and the grains are hard and firm. Harvest by cutting the earheads separately. Cut the stalk after a week, let it dry and then stack it (for tall varieties, cut the stem 10–15 cm above the ground, then separate the earheads). Dry the earheads and thresh with a mechanical thresher, a stone roller or cattle; then dry the produce and store it.
